  • Grilled Chicken With Cheese

    Ingredients

    • 4 x breast pcs of chicken
    • 4 Tbsp. vegetable oil t ablespoon lemon juice
    • 1 tsp dry thyme salt freshly grnd black pepper
    • 100 gm cooked ham thinly sliced
    • 50 gm gruyere cheese thinly sliced
    • 2 lrg tomatoes sliced

    Directions

    1. Cut 4 pcs of foil about 30cm square.
    2. Skin the chicken pcs and cut 3 slits in each chicken breast.
    3. Lay on the foil.
    4. Mix together the oil lemon juice and thyme salt and pepper.
    5. Draw the foil round the chicken pour on the sauce and seal the parcels.
    6. Cook the chicken parcels under a preheated moderate grill turning them once for 35 min till the juices run clear when the chicken pcs are pierced with a skewer.
    7. It is important to check which if using an electric grill the foil does not touch the element.
    8. Increase the heat to high.
    9. Open the parcels arrange the sliced ham then cheese then tomatoes on the chicken breasts and spoon a little sauce on to the tomatoes.
    10. Grill the topping under high heat for about 34 min till the cheese is bubbling.
    11. For a really super accompaniment try corn on the cob cooked in boiling water and then generously brushed with melted butter and pepper.
    12. A couple of min under the warm grill sizzles them to perfection.
    13. Serves 4
