Grilled Chicken Sandwich With Smoky Red Onion Salsa
Ingredients
- 1 sm Red onion, cut into 4 slices
- 1 x Tomato, cut into 4 slices
- 6 Tbsp. Fresh lime juice
- 1/4 c. Minced fresh cilantro
- 4 dsh Red pepper sauce (up to 10) Salt and cracked black pepper
- 3 Tbsp. Chili pwdr
- 1 Tbsp. Cumin
- 1 Tbsp. Cracked black pepper
- 4 x Boneless, skinless chicken-breast halves (1 1/4 lb.) Salt
- 8 slc Sourdough bread, 1/2-inch-thick
- 1/4 c. Mayonnaise Assorted baby lettuces
Directions
- 1. Heat grill.
- 2. Make Smoky Red-Onion Salsa: Grill onion and tomato slices 2 min per side. Chop coarsely and transfer to bowl. Stir in remaining ingredients.

- 3. Combine chili pwdr, cumin and pepper in small bowl. Rub all over chicken. Sprinkle with salt.
- 4. Grill chicken over medium-warm heat till cooked through, 4 to 5 min per side. Grill bread till golden brown, 30 to 60 seconds per side.
- 5. Top 4 bread slices with mayonnaise, lettuces, chicken, then salsa. Top with remaining bread.
