Ingredients

  • 4 x boneless, skinless chicken breast halves
  • 1/2 tsp lemon pepper
  • 2 1/2 c. cooked rice
  • 1 x Red Delicious apple -- minced
  • 4 x ribs celery -- sliced
  • 1/3 c. raisins
  • 2 tsp lemon juice
  • 1/2 c. mayonnaise
  • 1/4 c. apple juice Sprinkle chicken proportionately with lemon pepper. Grill chicken, covered with grill lid, over medium-high heat, 7 to 8 min each side or possibly till done. Cold and coarsely chop.

Directions

  1. Combine chicken, rice, and next 4 ingredients in a large bowl.
  2. Stir together mayonnaise and apple juice; pour carefully over chicken mix and toss gently. Cover and chill.
  3. Yield: 6 servings.
