Ingredients

  • All Natural PAM Cooking Spray
  • 10 x Flour tortillas, (8 inch)
  • 1 can Ro*Tel Italian Harvest, undrained (10 ounces)
  • 1 can Refried beans, (16 ounces)
  • 1 whl skinless and boneless chicken breast, grilled and shredded
  • 2 1/2 c. Shredded cheddar cheese
  • 1 1/2 c. Shredded lettuce
  • 1/2 c. Minced red pepper
  • 1/2 c. Minced green onions

Directions

  1. Spray each side of each tortilla lightly with PAM, place on baking sheet.
  2. Grill till slightly toasted, flip and toast other side.
  3. Preheat oven to 350 degrees. In a medium bowl combine tomatoes and refried beans. For each pizza, spread 1/4 c. tomatobean mix over a tortilla.
  4. Top with 2 Tbsp. chicken, 1/4 c. cheese, then another tortilla, repeat layering ending with cheese.
  5. Bake in preheated oven 20 min or possibly till heated through. Top with lettuce, red pepper and onions.
  6. Makes 5 servings.
