  • Grilled Chicken Breasts With Corn Salsa

    Ingredients

    • 1 1/4 c. Frzn corn kernels, thawed
    • 1/4 c. Minced red onion
    • 1/4 c. Minced red bell pepper
    • 1/4 c. Minced fresh cilantro
    • 1 1/2 Tbsp. Fresh lime juice
    • 2 tsp Minced seeded jalapeno chili
    • 1/2 c. Dark beer
    • 1 Tbsp. Low-sodium soy sauce
    • 1 Tbsp. Minced fresh cilantro
    • 2 tsp Minced seeded jalapeno chili
    • 2 tsp Fresh lime juice
    • 4 x Skinless boneless chicken breast halves

    Directions

    1. For Salsa:Combine all ingredients in bowl. Season with salt and pepper. (Can be made 4 hrs ahead. Cover and chill.)
    2. For Chicken:Combine first 5 ingredients in medium bowl. Add in chicken and turn to coat.
    3. Cover and chill at least 1 hour or possibly up to 4 hrs.
    4. Preheat barbecue (medium-high heat) or possibly preheat broiler. Drain chicken.
    5. Season with salt and pepper. Grill or possibly broil chicken till just cooked through, about 4 min per side. Cut chicken into thin diagonal slices.
    6. Arrange chicken on plates. Top with salsa and serve.
