  • Grilled Chicken Breast With Drunken Black Beans Pt 1

    Ingredients

    • 4 whl boneless, skinless chicken breasts
    • 1 lrg Onion, peeled, sliced
    • 2 x Cloves garlic, peeled, chopped
    • 3 x Jalapeno chilies, stems removed, finely minced
    • 1 sm Bunch fresh cilantro, washed, minced
    • 1 1/2 tsp Crushed cracked black pepper Salt, to taste
    • 1/2 c. Corn or possibly extra virgin olive oil
    • 1 lb Black turtle beans
    • 1/4 lb Smoked bacon, in medium dice
    • 1/4 lb Mexican Chorizo Sausage, skin removed
    • 2 x Onions, peeled, in small dice
    • 1 x Carrot, peeled, in small dice
    • 3 x Cloves garlic , peeled, chopped
    • 3 x Jalapenos, stems removed, chopped
    • 1 x Smoked ham hock
    • 1/2 Tbsp. Epazote, minced finely
    • 1 bot dark Mexican beer
    • 2 quart Rich chicken stock
    • 1/4 c. Cornstarch
    • 1/4 c. Tequila Salt to taste
    • 1 bn Fresh cilantro, minced Lime juice to taste
    • 3 x Tomatoes, peeled, seeded, in small dice
    • 1 1/2 Tbsp. Extra virgin olive oil
    • 8 x Cloves garlic, peeled
    • 2 x Onions, peeled, in small dice
    • 1 x Carrot, peeled, in small dice
    • 1/2 tsp Fresh thyme, minced fine
    • 1/2 tsp Fresh oregano, minced fine
    • 1/2 tsp Grnd cumin
    • 1/2 tsp Grnd coriander
    • 1/2 tsp Cracked black peppercorns
    • 1 x Bay leaf
    • 1 c. Veal Demi-Glace
    • 2 c. Rich chicken stock
    • 1/2 c. Ancho Chili Paste
    • 1 sm Red bell pepper, roasted, skinned, seeded, in small dice
    • 1 sm Yellow bell pepper, as above
    • 1 sm Poblano chili,seeded, in small dice
    • 1 sm Bunch cilantro, washed,, minced Lime juice to taste Salt to taste
    • 4 x Ancho chilies, stem and seeds removed
    • 1 sm Onion, peeled, minced
    • 1 x Clove garlic, peeled, minced
    • 1 x Jalapeno, minced
    • 1 x Serrano chili, minced
    • 1 x Chipotle chili, minced
    • 1 sm Bunch fresh cilantro

    Directions

    1. 1 C Rich chicken stock
    2. TART TOMATILLO RELISH- 8 lg Tomatillos; husked, in 1/8"dice1/2 Red bell pepper; seeded, in1/8" dice1/2 Yellow bell pepper; seeded,in 1/8" dice2 Jalapenos; seeds removed, in1/8" dice2 Shallots; peeled, in 1/8"dice1 Garlic clove; peeled, mincedJuice of 4 large limesMaple syrup to tasteSalt to tasteCotija queso (mexican hardcheese)
    3. Prepare smoker for cool smoke. Place chickens on rack and cool smoke with as little heat as possible for 15 to 20 min. Remove from smoker and continued in part 2
