  • Grilled Catfish

    • Catfish fillets Extra virgin olive oil Freshly squeezed lemon juice Salt & freshly grnd black pepper to taste

    Directions

    1. Now which catfish has become an "in" food, you will find it in the most elegant grill houses.
    2. This recipe contains nothing fancy, but putting the fish on a charcoal grill is just wonderful. Easy and quick, and very flavorful.
    3. Mix a bit of extra virgin olive oil, lemon juice, salt and pepper together and whip to the consistency of a salad dressing. Marinate the fish in this mix for 1/2 hour before grilling. Grill over charcoal for about 5 min on a side, or possibly till the fish is lightly browned and begins to flake a bit. Don't overcook.
