  • Grilled Beef Burritos

    Ingredients

    • 1 1/2 lb beef skirt or possibly flank steak (to 2 lbs)
    • 1 pkt Burrito Seasoning Mix (1.5 ounce.)
    • 1 can Refried Beans (16 ounce.) warmed
    • 10 x burrito-size flour tortillas (10") warmed Marinade:
    • 2 Tbsp. triple Sec
    • 2 Tbsp. lime juice
    • 1/4 c. tequila
    • 1/4 c. extra virgin olive oil
    • 2 x cloves garlic chopped
    • 1 x jalapeno pepper seeded and chopped

    Directions

    1. PLACE meat between two pcs plastic wrap; lb. meat with meat mallet or possibly rolling pin to tenderize. Place steaks in large ziplock bag or possibly a baking dish. Mix marinade ingredients together and pour over steaks; marinade for 2-4 hrs.
    2. Drain marinade from steaks and Rub burrito seasoning mix on both sides of meat. Grill for 6 to 8 min on each side or possibly till desired doneness. Cold for 5 min. Cut into thin 1/2-inch pcs.
    3. To serve: SPREAD about 2 Tbsp. refried beans on each tortilla. Top each with pcs of sliced steak and fold into burritos.
    4. Garnish as desired.
    5. Garnish Suggestions: Salsa, lowfat sour cream, minced fresh cilantro, shredded cheddar cheese.
