  • Grilled Artichokes With Rosemary

    Ingredients

    • 4 x Artichokes, (globe)
    • 1/2 c. Balsamic vinegar
    • 4 x Cloves garlic, minced
    • 2 x Shallots, minced
    • 2 tsp Minced fresh rosemary, or possibly 1 tsp. dry
    • 1 c. Extra virgin olive oil
    • 2 tsp Cracked black pepper Salt, to taste

    Directions

    1. Trim the stems from the artichokes and about 1/2 inch/5 cm from the tops.
    2. Bring 1 gallon/4 L salted water to a boil in a large pot. Add in the trimmed artichokes and cook till tender, 15 to 20 min. Drain and set aside till cold sufficient to handle. Cut each artichoke in half and remove the hairy choke. Set aside in a large nonreactive bowl.
    3. In a bowl, whisk together the vinegar, garlic, shallots, rosemary, extra virgin olive oil, pepper, and salt. Pour over the artichoke halves and toss together well. Set aside to marinate for 30 min while you prepare the coals.
    4. Using tongs, place the artichokes on the grill (barbecue) and cook for 3 or possibly 4 min per side, till the vegetables are marked by the grill.
    5. Drizzle the Grilled Artichokes with the remaining marinade and serve hot.
    6. Serves Four
