  • Green Walnut Biscotti (Biscotti Alle Nocine)

    Ingredients

    • 2 3/4 c. flour
    • 2 c. sugar
    • 1 tsp baking pwdr
    • 3 whl Large eggs
    • 4 x egg yolks
    • 3 Tbsp. Nocello (walnut) liqueur
    • 1/2 c. minced green walnuts

    Directions

    1. Preheat the oven to 350 degrees.
    2. In a large mixing bowl, stir together the flour, sugar and baking pwdr. In a separate bowl, whisk together the Large eggs, yolks, and Nocello. Add in the wet ingredients to the dry and stir just till the dough comes together, about 1 minute. Add in the walnuts and mix till just incorporated.
    3. Roll the dough into 3 logs, about 10 inches by 2 inches and place on an ungreased baking sheet. Bake 20 min till light golden and remove from oven.
    4. As soon as they are cold sufficient to handle, cut the logs on a slight diagonal into pcs 1/3-inch thick and arrange, cut-side down, on the sheets.
    5. Reduce the heat to 275 degrees, return the pcs to the oven and bake 20 min longer, till crisp and dry. Allow to cold.
    6. This recipe yields about 30 cookies.

      I have made this recipe numerous times and I just can’t get it right. Cookie middle looks dense and gets very hard when cooled. Help!
