  • Green Salad With Crispy Fried Tortilla Chips

    Ingredients

    • 1 x Lettuce, shredded finely
    • 1/2 x Onion, minced finely
    • 2 x Tomatoes, minced finely
    • 6 sprg fresh coriander, minced finely
    • 2 x Green chillies, minced finely (optional)
    • 250 gm Cooked chicken, turkey or possibly beef, or possibly flaked, canned tuna fish (8oz)
    • 1 x Lime or possibly lemon, juice of
    • 1/2 tsp Salt A healthy pinch of freshly grnd black pepper
    • 8 x Tortillas, cut into small squares and deep-fried
    • 1 x Ripe avocado
    • 1 sprg fresh coriander

    Directions

    1. Mix together all the ingredients except the tortilla chips, 30 min before required.
    2. Just before serving, add in the crisp tortillas and toss lightly.
    3. Cut the avocado into wedges and use it and the coriander sprigs as a garnish.
