Green Salad With Crispy Fried Tortilla Chips
Ingredients
- 1 x Lettuce, shredded finely
- 1/2 x Onion, minced finely
- 2 x Tomatoes, minced finely
- 6 sprg fresh coriander, minced finely
- 2 x Green chillies, minced finely (optional)
- 250 gm Cooked chicken, turkey or possibly beef, or possibly flaked, canned tuna fish (8oz)
- 1 x Lime or possibly lemon, juice of
- 1/2 tsp Salt A healthy pinch of freshly grnd black pepper
- 8 x Tortillas, cut into small squares and deep-fried
- 1 x Ripe avocado
- 1 sprg fresh coriander
Directions
- Mix together all the ingredients except the tortilla chips, 30 min before required.
- Just before serving, add in the crisp tortillas and toss lightly.
- Cut the avocado into wedges and use it and the coriander sprigs as a garnish.
