  • Green Papaya Salad With Shrimp And Pork

    Ingredients

    • 1 1/2 c. Shredded green papaya pulp
    • 4 tsp Vinegar
    • 1 tsp Sugar
    • 2/3 tsp Salt
    • 3 1/2 Tbsp. Cool water
    • 20 x Basil leaves, coarsely minced
    • 1 c. Cooked medium shrimp, sliced in halves
    • 1 c. Thinly sliced cooked pork
    • 2 Tbsp. Minced peanuts Asian chile sauce, optional Fish Sauce Dressing (recipe follows)

    Directions

    1. Combine green papaya, vinegar, sugar, salt and water in bowl. Let stand at least 15 min in refrigerator. Toss with basil leaves and garnish with shrimp, pork and peanuts. Serve with chile sauce and Fish Sauce Dressing to taste.
    2. Makes 4 to 6 servings.
    3. Fish Sauce Dressing:4 tsp. vinegar1 tsp. sugar3 Tbsp. cool water 1 to 2 tsp. fish sauce 2 Tbsp. finely shredded peeled carrot
    4. Combine vinegar, sugar, water, fish sauce and carrot in bowl.
    5. Makes about 1/3 c..
