Green Papaya And Lotus Root Salad With Orange
- 1 x small lotus root, peeled and thinly sliced
- 1 x green papaya, peeled and julienned
- 1 x orange, juiced
- 1 x Thai chili, finely minced
- 1/4 tsp kosher salt (1 mL)
- Bring a pot of water to a boil and blanch the lotus root for 20 seconds.
- Refresh in cool water.
- Add in julienned papaya, orange juice, Thai chili and kosher salt.
- Mix well.
- Let stand for 15 min before serving.
