  • Green Onion Smashed Potatoes

    Ingredients

    • 12 x scallions
    • 1/4 c. extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste
    • 16 x new potatoes quartered
    • 1 head roasted garlic
    • 1 stk unsalted butter softened

    Directions

    1. Preheat oven to 450 degrees. Brush scallions with some of extra virgin olive oil and season with salt and pepper to taste. Place on a sheet pan and roast for 10 min. Remove from the oven and coarsely chop.
    2. Toss the potatoes with the remaining extra virgin olive oil and sprinkle with salt and pepper. Roast till just a bit overcooked but not brown. As soon as they come out of the oven, place the poates in a large mixing bowl, add in the garlic, scallions, and butter.
    3. Smash with a potato masher to achieve a rustic texture, not smooth. Season with salt and pepper.
    4. This recipe yields 8 servings.
