Green Eggs & Ham

A fun and tasty party dish.

Ingredients

  • 1 lb sliced honey ham
  • 2 dozen hard boiled eggs
  • 2 ripe avocados
  • 3 tbs Mrs Dash Southwest Seasoning
  • 2 red onions, minced
  • 2 stalks celery, minced
  • juice of 1 lime
  • 1/4 Thai green chilli sauce
  • 1/4 minced coriander
  • 1/4 cup mayonnaise

Directions

  1. Peel and slice the eggs in half.
  2. Place the egg yolks into a large mixing bowl.
  3. Set the egg white halves aside for now.
  4. Peel the avocado and remove the stone.
  5. Add the avocado to the egg yolks and mash with a potato masher until slightly chunky.
  6. Add the juice of the lime and stir well.
  7. Add the chilli sauce, mayonnaise, chopped coriander, seasoning, and stir until very well blended.
  8. The mix should look fairly green by now.
  9. Taste and adjust the seasoning.
  10. If you wish to add more of the green chilli sauce at this point for a tangier filling.
  11. Stir in the celery and onion until well blended.
  12. Put the green mix into a piping bag with a large open tip.and set aside.
  13. Set the egg white halves in a lettuce lined platter,
  14. Pipe the green egg filling into each half.
  15. Roll the sliced ham and tuck a roll between each of the egg halves.
  16. Roll any extra ham and keep for refills
  17. Each serving = 2 halves and a slice of ham (or 2)
