  • Green Chili Chicken Enchiladas

    I found this recipe online while looking for something simple to cook for dinner and it turned out great. The recipe called for corn tortillas but I used flour tortillas.

    Ingredients

    • 12 flour tortillas (you can also use corn)
    • 2- 8 oz cans or 3 cups green chili enchilada sauce
    • 1 1/2 cups white shredded cheese (Monterey jack, mozzarella)
    • 1/4 cup diced green chiles
    • 1 1/2 cups shredded chicken, fresh chicken breasts or chicken breast fajita meat fileted and diced
    • cooking spray like Crisco canola or olive oil

    Directions

    1. If using fresh chicken breasts or already seasoned fajita chicken breast meat: filet chicken breast then cut unto diced bite size pieces.
    2. Heat 1 tbsp olive oil in a skillet.Also, if using fresh chicken breasts season chicken with any garlic and herb seasoning, I added a tsp cilantro.
    3. Saute until chicken is no longer pink.
    4. Spray the bottom of baking dish with cooking oil
    5. Toss together the chicken, chiles, cheese and 1 cup of the chile sauce.
    6. Warm tortilla in skillet or microwave to soften.
    7. Lay a tortilla flat and fill with about 1/4 cup of filling down the center.
    8. Bring the edges over the filling to close it and then lay the tortilla seam side down in a 9x13 baking dish. Repeat until all of the tortillas are filled.
    9. Pour remaining sauce over the top. Sprinkle with shredded Monterrey jack or mozzarella cheese.
    10. Bake for 20 minutes at 300 degrees
