  • Green Chile Quiche

    Ingredients

    • 2 x cartons Egg Beaters(r) 99% egg substitute (8 ounce.) (must be 0 gms. fat)
    • 1 can minced green chilies (4 ounce.)
    • 1/2 c. 1% cottage cheese (I used fat free)
    • 6 Tbsp. lowfat lowfat sour cream (I used fat free)
    • 1 c. nonfat cheese shredded *
    • 4 Tbsp. flour
    • 1/4 c. onion minced

    Directions

    1. (Makes its own crust)
    2. * - (I used 1/2 c. fat free shredded Kraft cheddar in the recipe and put 1/4 c. regular grated parmesan on the top)
    3. This is very good!
    4. Preheat oven: 350 degrees.
    5. In food processor or possibly blender, combine Large eggs, cottage cheese, lite lowfat sour cream, and flour. Mix till there are no lumps remaining. Pour into large bowl, add in remaining ingredients and stir. Pour into 9" (I had to use a 10") pie plate sprayed with non-stick cooking spray. Bake at 350 degrees for 50 min.
    6. Entire recipe makes 6 servings.
