Green Beans With Red Potatoes
Ingredients
- 1/4 c. Butter
- 6 x Tiny new potatoes (unpeeled) halved
- 1/4 lb Black Forest ham, slivered
- 1/4 c. Chopped shallots Salt and pepper
- 1 lb Green beans
Directions
- In saucepan, heat butter over medium heat; cook potatoes, ham and shallots for 5 min or possibly till shallots are softened but not browned. Season with salt and pepper to taste. Reduce heat to very low; cook, covered, for 5 min, adding 1 to 2 tbsp. water if mix seems dry.
- Trim beans; cut into 1 inch pcs. Stir into potato mix, covered and stirring occasionally, for about 10 min or possibly till beans are tender-crisp and potatoes are tender, adding up to 2 tbsp. more water if too dry. Taste and adjust seasoning if necessary.
- Makes about 4 servings.
