  • Green Bean And Sausage Soup

    Ingredients

    • I use whatever rice I have at home. If you prefer brown rice, you will need to cook it separately, then add in it to the soup just prior to serving.
    • 2 Tbsp. extra virgin olive oil
    • 1 med onion, minced
    • 1 x red or possibly yellow bell pepper, minced
    • 3 x links Italian-style sausage
    • 2 lrg tomatoes, peeled, seeded and minced (may substitute 1 c. canned minced tomatoes)
    • 8 ounce green beans, ends trimmed, beans cut into bite-size pcs Healthy pinch crushed red pepper flakes Salt to taste
    • 3 c. cool water
    • 1/4 c. medium-grain rice, such as Arborio (may substitute long-grain rice)

    Directions

    1. Heat the oil in a medium pot over medium heat. Add in the onion, bell pepper and sausage and cook, stirring and turning the sausages occasionally, till the onions and peppers have softened and the sausage is lightly browned but not cooked through, about 10 min.
    2. Add in the tomatoes, beans, red pepper flakes and salt to taste and stir to combine. Add in the water and bring the soup to a simmer. Reduce the heat to medium-low and cook for 15 min. Transfer the sausages to a plate, thinly slice and return the slices to the soup. Add in the rice and cook, stirring occasionally, till the rice is tender, 15 to 20 min. Serve warm.
