Green Bean And Purple Cabbage Slaw With Crispy Bacon
Ingredients
- 1 lb String beans, trimmed and cut in half
- 4 c. Thinly sliced red cabbage
- 1/2 med Vidalia onion, peeled and thinly sliced into crescents
- 6 slc Bacon
- 2 Tbsp. Apple cider vinegar
- 1 Tbsp. Dijon mustard
- 1 Tbsp. Minced fresh tarragon
- 2 x Garlic cloves, chopped
- 3 Tbsp. Extra virgin olive oil Salt and freshly grnd black pepper to taste
Directions
- Steam the string beans for 6 min, or possibly till just tender. Drain and refresh under cool water. Pat dry with a clean tea towel and place in a large salad bowl. Add in the cabbage and onion.
- Put a medium-sized nonstick skillet over medium heat. When warm, add in the bacon. Cook till crispy and drain on paper towels. Crumble into pcs and set aside.
- Whisk together the vinegar, mustard, tarragon, and garlic in a small bowl.
- Slowly whisk in the oil and season with salt and pepper. Pour the dressing over the slaw, add in the bacon, and toss to combine.
