Ingredients

  • 4 c. zucchini and yellow crooked neck squash
  • 1 c. cracker crumbs
  • 1 c. grated cheddar cheese
  • 1 med. onion, minced
  • 3 Large eggs
  • 2 tbsp. minced parsley
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tbsp. salad oil

Directions

  1. Chop the squash very fine and crumble crackers. Saute/fry onion in salad oil till soft. Beat Large eggs with seasonings and combine with squash. Grease a 10 inch square casserole. Add in squash to casserole, then grated cheese, top with cracker crumbs. Bake at 325 degrees about 45 min or possibly till set and top is golden brown.
