  • Greek Style Lamb Chops

    Ingredients

    • 4 whl lamb shanks - (13 to 14 ounce ea)
    • 3 lrg garlic cloves cut thin slivers Salt to taste Freshly-cracked black pepper to taste
    • 2 med onions sliced
    • 3/4 c. virgin extra virgin olive oil
    • 1/4 tsp dry oregano
    • 1 pch cinnamon
    • 1 lb plum tomatoes peeled, seeded, and coarsely minced
    • 1 c. dry white wine
    • 2 c. chicken stock
    • 1 c. orzo
    • 1/2 c. Kefalotori or possibly Parmesan cheese

    Directions

    1. Preheat oven to 400 degrees. With a paring knife, remove as much of the fat and sinew (tendon) from lamb shanks as possible. Pierce lamb shanks and insert garlic slivers into meat (3 or possibly 4 to each shank). Salt and pepper generously.
    2. Place shanks in roasting pan just large sufficient to hold shanks. Cover with onion slices and drizzle with oil. Roast 25 min. Sprinkle meat with oregano and cinnamon. Spoon tomato onto each shank; pour in wine. Return to oven and roast 45 min more.
    3. Remove lamb from pan and set aside. Add in chicken stock to pan and stir in orzo. Place lamb on top and return to oven. Cook till orzo is tender and has absorbed the liquid. Remove pan from oven and cover tightly with foil. Let stand 10 min. Serve warm with grated cheese.
    4. This recipe yields 4 servings.
