Greek Prosphoro

We use this bread during church services, it is made by parishioners and is used during communion and given to people to take home. I was surprised the recipe was difficult to find when I began baking for the church, so if there are any Greek or Orthodox people out there here is the recipe and instructions. I use a heating pad during the rising process during the winter time, or use my microwave. I boil a bowl of water in the microwave, place the dough in there and shut the door for 40 minutes, it's warm and helps with rising

Ingredients

  • 4 Tbs dry yeast
  • 10 Cups flour
  • 2 Tsp salt
  • 4 Cups warm water (110 degrees)

Directions

  1. In your mixer with the bread hook attachment place flour and salt
  2. In a measuring cup add dry yeast and water, stir and allow to grow
  3. When dissolved and foamy add gradually to flour while the mixer is slowly going, allow the dough to combine with the water
  4. Continue to blend the dough, you might have a bit of flour on the bottom and the dough might be sticky but just allow the machine to knead the dough until it looks smooth
  5. Remove from the mixer bowl and hand knead a bit and form into a smooth ball
  6. Place in a clean bowl and cover with plastic wrap and towel, allow to rise minutes
  7. Punch dough down and separate into 2 pieces, roll and knead these for about 3-4 minutes.
  8. Place the balls into a 9 inch round parchment lined cake pan (do not use any oil or spray)
  9. Dust top with flour and use the seal (a wooden carved seal specifically made for Holy Bread) Got mine from Greece
  10. Press the seal into the round and leave it there
  11. Poke 8 holes around the seal with a wooden skewer (This makes the seal easier to pull off prior to baking
  12. Allow dough to rise about minutes
  13. Carefully remove the wooden seal
  14. Place in a 375 oven and bake for 45 minutes or until golden
