    Greek Peasant Salad (Horiatiki)

    Ingredients

    • 6 ripe Roma tomatoes, cut in chunks
    • 1 cucumber, peeled, cut in chunks
    • 1/2 small red onion, sliced
    • 1/2 cup feta cheese - I like Bulgarian better than Greek, but it may be hard to find in some places
    • 1/2 cup good quality extra virgin olive oil
    • salt and pepper to taste
    • 1 loaf fresh bread - sourdough is best

    Directions

    1. Cut up vegetables and put in salad bowl.
    2. Add salt and pepper, feta and oil.
    3. Let "sweat" a half hour at room temp.
    4. Serve with bread.
    5. Dip bread into bottom of bowl and enjoy the juices.

        No vinegar? By "sweat" do you mean stand at room temp?

          Hi,

          Yes, salt causes the veggies to release juices, which go to bottom of the bowl.

          The Greeks do not use vinegar on this salad, which is commonly served in restaurants before the main course.

          Try the recipe as is, and dip your bread in the juices.
