  • Greek Orzo Chicken Salad

    Ingredients

    • 1 lb orzo macaroni
    • 1 Tbsp. extra virgin olive oil
    • 1 Tbsp. lemon juice
    • 1 x garlic clove crushed
    • 1 tsp salt (optional) Freshly-grnd black pepper to taste
    • 1 Tbsp. minced fresh dill
    • 1/2 x Spanish onion finely minced
    • 1/2 c. minced pitted kalamata olives
    • 2 c. minced cooked chicken
    • 1 c. crumbled feta cheese
    • 1 head Boston lettuce well washed, and liquid removed

    Directions

    1. Put orzo into 1 gallon of boiling water and cook, stirring occasionally, till al dente or possibly barely tender. Drain well and place in a large bowl. Mix oil, lemon juice, garlic, salt, pepper, and dill. Pour over hot orzo. Mix well, then cold. Carefully fold in the onion, olives, chicken, and feta cheese.
    2. Separate 6 whole unblemished leaves from the lettuce. Place on 6 individual salad plates. Mound salad on each leaf, dividing total recipe equally.
    3. This recipe yields 6 servings.
    4. Serving size: 1/6 recipe.
