Greek Garlic-Lemon Chicken

This is my version of Uncle George's lemon-garlic chicken in Astoria, Queens.

Ingredients

  • 6 chicken thighs (skinless, bone-in) salted and peppered
  • 4 large yukon gold potatoes
  • 1 head garlic (peeled)
  • 1 lemon (seeds, rind and pith removed; sliced)
  • 2 C chicken broth
  • 2 TB butter
  • 2 TB flour
  • salt & pepper to taste

Directions

  1. Place broth and garlic cloves in sauce pan on medium high heat, simmer for 15-20 mins.; remove cloves and set aside.
  2. In a smoking hot, oiled cast-iron skillet sear both sides of the chicken thighs until browned. Remove and tent with foil.
  3. Peel and quarter potatoes lengthwise. Soak in heavily salted water.
  4. Add butter to skillet; when melted add flour. Cook roux for a minute or two, then slowly add chicken broth, salt and pepper. Simmer in skillet until thickened slightly.
  5. Add chicken thighs and potatoes to skillet, top with garlic cloves and arrange lemon slices on top of chicken.
  6. Cover with foil and bake for 45 mins.
