Greek Appetizer Meatballs with Goat Cheese Tzatziki Dip

Ingredients

  • 1 lb. lean ground chuck or sirloin
  • 1 beaten egg
  • 1/4 cup seasoned breacrumbs
  • 1/4 cup minced fresh mint
  • 3 tbs. chopped scallions, white and some green parts
  • 1 tsp. Greek seasoning (store-bought)
  • salt to taste
  • olive oil
  • Goat Cheese Tzatziki:
  • 6 oz. Greek yogurt, like Oikos
  • 1 oz. goat cheese (chevre), room temp
  • 1/2 cup peeled, seeded, chopped cucumber
  • 1/4 cup fresh lemon juice
  • 1 clove pressed garlic
  • 1/2 tsp salt
  • Optional: mini pitas, or pita slices

Directions

  1. Combine the tzatziki ingredients well and refrigerate several hours.
  2. Mix ground beef with other ingredients, roll into 1 1/2 balls. Refrigerate an hour.
  3. Heat oil in a skillet, saute meatballs until browned on all sides.
  4. Remove to paper towel-lined platter.
  5. Serve warm or place in chafing dish, with sauce on the side.
