  • Great Pumpkin Cookie Recipe

    Perfect for fall.

    Ingredients

    • 2 c. flour
    • 1 c. quick or possibly old-fashioned oats, uncooked
    • 1 teaspoon baking soda
    • 1 teaspoon grnd cinnamon
    • 1/2 teaspoon salt
    • 1 c. butter, softened
    • 1 c. firmly packed brown sugar
    • 1 c. granulated sugar
    • 1 egg, slightly beaten
    • 1 teaspoon vanilla extract
    • 1 c. Libby's solid pack pumpkin
    • 1 c. semi-sweet real chocolate morsels
    • Assorted icing or peanut butter
    • Assorted candies, raisins or nuts

    Directions

    1. Preheat oven to 350 degrees.
    2. Combine flour, oats, baking soda, cinnamon and salt.
    3. Cream butter; gradually add in sugars, beating till light and fluffy.
    4. Add in egg and vanilla; mix well.
    5. Alternate additions of dry ingredients and pumpkin, mixing well after each addition. Stir in morsels.
    6. For each cookie, drop 1/4 c. dough onto lightly greased cookie sheet.
    7. Spread into pumpkin shape, using a thin metal spatula.
    8. Add in a bit more dough to create stem.
    9. Bake 20 to 25 min until cookies are hard and lightly browned. Remove from cookie sheets; cool on racks.
    10. Decorate, using icing or peanut butter to affix assorted candies, raisins or nuts.
    11. VARIATION: Substitute 1 c. raisins for morsels.
