Grandma Helen's 31 Day Fruit Cakes

Ingredients

  • 7 1/2 c. sugar
  • 2 quart. peaches and juice
  • 40 ounce. can pineapple and juice
  • 40 ounce. can cherries, no juice
  • 2/3 c. oil and 4 Large eggs (per fruit cake)
  • 4 plain white cake mixes (1 mix per fruit cake)
  • 4 boxes instant vanilla pudding (1 box per fruit cake)
  • 4 c. minced nuts
  • 1 gallon jug with lid

Directions

  1. Put 2 1/2 c. sugar, 2 qts of peaches and juice in gallon jug.
  2. Stir daily for 10 days.
  3. Add in 2 1/2 c. sugar, 40 ounces of pineapple and juice. stir for 10 days.
  4. Then add in 2 1/2 c. of sugar, 40 ounces of cherries - NO juice. Stir for 10 days.
  5. On 31st day, beat 2/3 c. oil and 4 Large eggs.
  6. Add in 1 white cake mix. Beat.
  7. Add in 1 box pudding and beat.
  8. Stir in 1 1/2 c. fruit and some juice and 1 c. minced nuts and pour into floured tube pan.
  9. Bake at 350 degrees for 1 hour.
  10. Makes sufficient fruit and juice for 4 cakes.
  11. Use leftover fruit and juices for a starter cake mix at least 1 1/2 to 2 c.. Can be frozen for later use.
