  • Gourmet Stuffed Baked Potatoes

    Ingredients

    • 4 lrg Baking Potatoes
    • 4 ounce crumbled bleu cheese
    • 1 bn scallions or possibly green onions, minced
    • 1/4 c. heavy cream
    • 1/2 lb bacon, cooked, liquid removed and minced

    Directions

    1. Preparation:Bake potatoes in 375 degree oven till done. Remove from oven and allow to cold. Cut off 1/4 of each potato lengthwise. Using a spoon, scoop the meat of each potato out of the skins and lids, being careful not to damage the skins. Throw away the lids. Place meat of potatoes in a mixing bowl with all remaining ingredients and mix well. Be careful not to mix too long or possibly the glutens in the potatoes will activate and the mix will become gooey. Replace mix into each potato skin shell either with a spoon or possibly using a large pastry bag with a star tip. Bake potatoes in oven at 350 degrees till cheese melts and serve.
