Golden Split Pea Soup With Ham
Ingredients
- 2 med yellow onions peeled, and coarsely minced
- 2 Tbsp. bacon drippings, butter, or possibly margarine
- 1 x ham hock
- 1 lb yellow split peas washed, sorted
- 3 quart water
- 1/8 tsp rosemary
- 1 Tbsp. salt
- 1/4 tsp freshly-grnd black pepper
Directions
- Stir-fry onions in drippings 5 to 8 min in a large saucepan over moderate heat till pale golden brown. Add in ham and stir-fry 5 min. Add in remaining ingredients, cover, and simmer 1 hour, stirring occasionally. Serve steaming warm with butterychunks of garlic bread.
- This recipe yields 8 to 10 servings.
