Golden Raisin Cookies

- 1 cup butter, softened
- 1 1/2 cups sugar
- 1 tbsp lemon juice
- 2 eggs
- 3 1/2 cups flour
- 1 1/2 tsp cream of tartar
- 1 1/2 tsp baking soda
- 1 pkg. (15 oz.) golden raisins (2 1/2 cups)
Directions
- In a large bowl, cream the butter and the sugar until light and fluffy.
- Add the lemon juice and the eggs
- Combine the dry ingredients
- Gradually add to the creamed mixture
- Stir in the raisins
- Roll into 1 inch balls
- Place on greased baking sheets
- Flatten with a floured fork
- Bake at 400 F for 8-10 minutes or until lightly browned
