Gnocchi With Mushrooms And Artichokes
Ingredients
- 4 Tbsp. Extra virgin olive oil
- 1 x Clove garlic, minced
- 1 1/2 lb Mushrooms, sliced Freshly grnd black pepper Salt to taste
- 2 tsp Minced fresh parsley
- 1 can (14-ounce) artichoke hearts, liquid removed
- 1 pkt Gnocchi or possibly any other short noodle
- 1 1/2 x -(up to)
- 2 c. Freshly grated Parmesan cheese
Directions
- In a large skillet, saute/fry mushrooms and garlic in extra virgin olive oil for 15 min.
- Add in salt, pepper, parsley and artichokes. Cook 5 min longer to heat artichokes. Cook gnocchi in salted water. Drain but Don't RINSE. Pour gnocchi onto a heated platter, pour mushrooms and artichokes over gnacchi and sprinkle liberally with Parmesan cheese.
- Yield: 6 servings.
