  • Gnocchi With Fresh Tomatoes, Green Olives And Smoked Mozzarella

    Ingredients

    • 1 lb Fresh plum tomatoes
    • 6 Tbsp. Extra-virgin extra virgin olive oil
    • 2 x Garlic cloves thinly sliced
    • 1/2 c. Green olives, such as Picholine
    • 1/4 x fresh Smoked Mozzarella
    • 1 lb Gnocchi see * Note
    • 2 Tbsp. Fresh marjoram leaves Salt to taste Freshly-grnd black pepper to taste

    Directions

    1. Bring 6 qts of water to boil in a large spaghetti pot and add in 2 Tbsp. of salt.
    2. Remove stem ends from tomatoes and chop tomatoes into 1/4-inch cubes, reserving all juices. In a 12-inch to 14-inch saute/fry pan, heat extra virgin olive oil till, smoking. Add in garlic and cook 30 seconds till light-brown. Add in tomatoes and juices and cook 2 min. Add in olives and remove from heat. Cut smoked Mozzarella into 1/4-inch cubes and set aside.
    3. Drop gnocchi into boiling water and cook till they float (about 3 min). Drain gnocchi into colander and carefully pour them in to pan with tomato mix. Return to heat and toss gently till bubbling. Add in Mozzarella, marjoram leaves and season with salt and pepper. Pour into heated serving dish and serve immediately.
    4. This recipe yields 4 servings.
