    Gluten Free Sour Cream Coffee Cake

    Apple, nutty and moist coffee cake that is gluten free and great with a warm cup of coffee or big glass of orange juice.

    Ingredients

    • 2 tsp. cinnamon
    • 1/2 cup chopped pecans
    • 1 1/2 cup organic pure cane sugar, divided
    • 1 medium granny smith apple
    • 2 cups all purpose gluten free flour
    • 1 1/2 tsp. baking powder
    • 1/2 tsp salt
    • 2 large eggs, room temperature
    • 2 tsp. pure vanilla extract
    • 1 cup low fat sour cream, room temperature
    • 1/3 cup canola oil

    Directions

    1. Spray 9" tube pan with gf cooking spray.
    2. Preheat oven to 350 degrees.
    3. Mix nuts, cinnamon and 1/2 cup of sugar in a small bowl.
    4. Peel and core apple and cut into long thin slices.
    5. Whisk dry ingredients together in separate bowl.
    6. Beat eggs until well blended and add remaining sugar, 1 TBSP at a time until creamy and light colored.
    7. Add vanilla, flour mixture, sour cream and oil and beat at medium speed for approx. 30 seconds.
    8. Spread 1/2 the batter into pan.
    9. The batter will look like there is not enough but your layers will be thin and then puff up when baking.
    10. Top with apple slices and 1/2 nut mixture.
    11. Spread remaining batter over top.
    12. Sprinkle with remaining nut mixture
    13. Place in oven
    14. Bake 50 minutes or until toothpick comes out clean.
    15. Cool in pan for about 20 minutes on a rack then remove from pan
