Gluten Free Sour Cream Coffee Cake

- 2 tsp. cinnamon
- 1/2 cup chopped pecans
- 1 1/2 cup organic pure cane sugar, divided
- 1 medium granny smith apple
- 2 cups all purpose gluten free flour
- 1 1/2 tsp. baking powder
- 1/2 tsp salt
- 2 large eggs, room temperature
- 2 tsp. pure vanilla extract
- 1 cup low fat sour cream, room temperature
- 1/3 cup canola oil
Directions
- Spray 9" tube pan with gf cooking spray.
- Preheat oven to 350 degrees.
- Mix nuts, cinnamon and 1/2 cup of sugar in a small bowl.
- Peel and core apple and cut into long thin slices.
- Whisk dry ingredients together in separate bowl.
- Beat eggs until well blended and add remaining sugar, 1 TBSP at a time until creamy and light colored.
- Add vanilla, flour mixture, sour cream and oil and beat at medium speed for approx. 30 seconds.
- Spread 1/2 the batter into pan.
- The batter will look like there is not enough but your layers will be thin and then puff up when baking.
- Top with apple slices and 1/2 nut mixture.
- Spread remaining batter over top.
- Sprinkle with remaining nut mixture
- Place in oven
- Bake 50 minutes or until toothpick comes out clean.
- Cool in pan for about 20 minutes on a rack then remove from pan
