  • Glen's Chili A La Bambi

    Ingredients

    • 1 1/2 lb Venison burger, made with 80% venison, 20% beef fat
    • 3 lb Venison sirloin, cut in large chunks about 1-inch
    • 2 Tbsp. Oil, up to 4
    • 2 cl Garlic, chopped fine
    • 1 lrg Onion, minced
    • 2 can (29-ounce) minced tomatoes
    • 6 Tbsp. Chili pwdr
    • 1 Tbsp. Cumin
    • 1 Tbsp. Kosher salt
    • 1/2 Tbsp. Black pepper
    • 1 tsp Smoked habanero pwdr Chipotles (smoked jalapenos) Smoked habanero chiles

    Directions

    1. To make smoked habanero pwdr: Smoke ripe red jalapenos and ripe habaneros for up to 24 hrs till they are all shriveled and fairly dry.
    2. Completely dry in a dehydrator. Grind to a fine pwdr in a coffee grinder. BEWARE of the fumes while grinding!
    3. In a large pot, saute/fry venison in oil till no pink remains. Add in onion and garlic and sauce till onion is wilted. Add in tomatoes, undrained. Add in remaining spices except habanero pwdr.
    4. Simmer on low for about 3 hrs, stirring occasionally.
    5. Just prior to serving, sprinkle habanero pwdr over chili and stir till mixed.
    6. This is the 1998 First Place winner in the annual Chili Cook-Off.
