  • Gingery Chicken And Spinach Soup

    Ingredients

    • 1 x onion
    • 1 x piece (1/2 inch long) fresh ginger or possibly 3/4 tsp grnd
    • 1/2 Tbsp. Oriental Sesame oil
    • 1/2 Tbsp. peanut oil
    • 6 c. chicken broth or possibly water
    • 1 pkt (10 ounce) frzn minced spinach
    • 1 lb boneless, skinless chicken or possibly turkey breast
    • 1/2 bn scallions or possibly 1 small bunch coriander
    • 2 c. vermicelli, fine egg noodles, orzo or possibly pastina
    • 4 Tbsp. lemon juice salt & pepper to taste toasted sesame seeds [my SO adds garlic too]

    Directions

    1. 1. Finely chop the ONION. Peel and mince GINGER.
    2. 2. Heat SESAME OIL in soup pot over medium heat. Add in ONION and GINGER
    3. [and GARLIC], increase heat to high and saute/fry for a few seconds to relase aroma. Add in the BROTH and Frzn SPINACH. Cover the pot and bring the liquid to a boil. Reduce the heat and simmer till spinach is thawed (10 min).
    4. 3. Meanwhile, cut the CHICKEN into thin shreds or possibly 3/4 inch chunks.
    5. Slice the SCALLIONS, including about four inches of the green tops (or possibly rinse, stem and mince CORIANDER).
    6. 4. When the spinach has thawed, stir the soup, then add in the CHICKEN and NOODLES. Cover and simmer till the noodles and chicken are cooked (5 min). Add in the SCALLIONS (or possibly CORIANDER) and the LEMON JUICE. Season to taste with SALT and PEPPER.
    7. 5. Serve immediately, passing the TOASTED SESAME SEEDS for sprinkling over each portion.
