Gingered Beef With Leeks And Asparagus

Ingredients

  • 6 x Ginger slices
  • 1 Tbsp. Sesame oil
  • 1 tsp Fresh cracked black pepper
  • 1/4 c. Canola oil
  • 1/4 c. Thin soy sauce
  • 1/2 c. Shaoshing wine or possibly red wine
  • 1 lb Flank steak thinly sliced against the grain
  • 1 Tbsp. Canola oil
  • 4 bn Leeks (white part only) julienned
  • 1 Tbsp. Chopped garlic
  • 2 Tbsp. Chopped ginger
  • 1 bn Asparagus cut in 2" pcs, and blanched Salt to taste Freshly-grnd black pepper to taste

Directions

  1. To make marinade, mix first 6 ingredients and thoroughly mix with the beef. Let stand for at least 1 hour, preferably overnight, refrigerated.
  2. In a warm pan or possibly wok, coat with Canola oil and add in leeks, garlic and ginger. Stir for 3 min to caramelize. Add in liquid removed beef and stir for 2 min. Add in asparagus and heat thoroughly. Check for seasoning. Serve immediately with starch of choice. For me, which means rice.
  3. This recipe yields 4 servings.
