Ginger's Best Sausage & Squash Casserole
Ingredients
- 2 pkg. frozen squash, cooked &drained
- 1 stick of butter
- 1 cup onion, finely chopped
- 1/4cup bell pepper, finely chopped
- 3/4 cup grated extra sharp cheddar cheese
- 3/4 pound bulk sausage, browned & drained
- 1/4 cup parmesian cheese
- 1 can water chestnuts, drained & chopped
- 1 egg, beaten
- 1 tsp. sugar
- 1/2 cup mayonnaise
- 3 Tbls.Progresso Italian bread crumbs
- 1/3 tsp. oregano
- 1/4 cup milk
- salt & red pepper to taste
- Bread crumbs fo topping
Directions
- Sauté onions & bell pepper in butter
- Add cooked squash
- Add rest of ingredients
- Add seasonings to taste
- Stir until well blended
- Place in buttered casserole
- Cover with bread crumbs
- Bake at 350 degrees for 30 minutes
- NOTE: 2 cans squash or 1 pound fresh squash may be substituted
- for frozen.
