  • Ginger's Best Sausage & Squash Casserole

    Ingredients

    • 2 pkg. frozen squash, cooked &drained
    • 1 stick of butter
    • 1 cup onion, finely chopped
    • 1/4cup bell pepper, finely chopped
    • 3/4 cup grated extra sharp cheddar cheese
    • 3/4 pound bulk sausage, browned & drained
    • 1/4 cup parmesian cheese
    • 1 can water chestnuts, drained & chopped
    • 1 egg, beaten
    • 1 tsp. sugar
    • 1/2 cup mayonnaise
    • 3 Tbls.Progresso Italian bread crumbs
    • 1/3 tsp. oregano
    • 1/4 cup milk
    • salt & red pepper to taste
    • Bread crumbs fo topping

    Directions

    1. Sauté onions & bell pepper in butter
    2. Add cooked squash
    3. Add rest of ingredients
    4. Add seasonings to taste
    5. Stir until well blended
    6. Place in buttered casserole
    7. Cover with bread crumbs
    8. Bake at 350 degrees for 30 minutes
    9. NOTE: 2 cans squash or 1 pound fresh squash may be substituted
    10. for frozen.
