Gigi's Red Bean And Rice
Ingredients
- 1 lb Small red beans (soaked overnight)
- 2 slc Bacon, minced
- 3 lb Ham hocks Salt Pepper
- 1/4 stk butter
- 1 x Maui onion, minced
- 3 x Cloves garlic, pressed
- 1/2 x Green pepper, minced
- 1 sm Chili pepper, minced fine
- 1 tsp Brown sugar
Directions
- Wash and soak beans overnight. Place first six ingredients in large pot and bring to a boil. Add in remaining ingredients and simmer for 3-4 hrs.
- Stir occasionally and add in water, if needed. Serve with rice and sweet pickle relish. Me ke aloha, Mary NOTESE hele mai oukou e ai! (Come and eat!)
