German Potato Salad

A delicious warm potato salad that pairs wonderfully breaded pork chops

Ingredients

  • 1 C Chopped onions
  • 4 Large potatoes boiled , cooled and diced
  • 6 Slices Cooked bacon crumbled
  • 1/4 C Bacon grease
  • 2 T White vinegar
  • 1 Tbl Butter
  • 1/2 C Hellmans mayonnaise
  • 4 Tbl Sugar
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 Tbl Chopped fresh Italian parsley

Directions

  1. In a large pot boil potatoes cool, peel and cube
  2. In a skillet cook bacon and reserve 1/4 cup of the bacon grease
  3. In a large skillet sauté chopped onions in the 1 Tbl of butter and reserved bacon grease
  4. In a mixing bowl stir together the mayonnaise, vinegar , salt, pepper and sugar
  5. Add to the sautéed onions
  6. Add the cubed potatoes stir gently and heat through over a low to med heat for about 5 minutes do not boil
  7. Add the parsley and bacon cook for 1 minute longer
