German Potato Pancakes

I loved these “pancakes” when I was a child and visited my grandmother’s house. My mother made them occasionally, but they were always a staple at grandma’s house. As soon as they were out of the frying pan, I would top mine with some homemade applesauce or fruit preserves that were waiting on the table. If you cannot quite imagine eating something “sweet” with your potatoes, sour cream is delicious too. This is a classic German recipe that is so easy to make and your family will love it!

Ingredients

  • 1 pound potatoes (2 medium potatoes or about 2 cups shredded)
  • 1/2 small onion, diced small
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten
  • 1 tablespoon flour
  • 1 tablespoon oil

Directions

  1. Peel potatoes and onion. I used a food processor to grate both. Place the potatoes in a bowl. You will want to get as much of the moisture out of the potatoes as you can. Squeeze them in cheesecloth, a clean dish towel or let them stand for a few minutes in a bowl and drain the liquid out.
  2. Mix the grated onions, salt, pepper, beaten egg and flour with the potatoes. Mix thoroughly. Heat the oil in a frying pan. Scoop four 1/2 cup sized scoops of the potato mixture into the pain and flatten with the back of a spatula. Fry for 4-5 minutes on each side until golden brown. Drain on a paper towel and serve hot with applesauce or sour cream. Makes 4 large pancakes (2 or 4 servings).
