This Pilau dish will remind you of a tasty risotto with an american twist. It is much easier to make for large parties. Sophisticated, easy and tasty...just the way I like it.

    • 6 slices bacon...diced
    • 3 medium onions chopped
    • 2 cups rice (uncooked)
    • 3 cups chicken broth
    • 5 medium sized ripe tomatoes, chopped
    • 2 teaspoons Worcestershire
    • 1 tsp ground nutmeg
    • 1 bay leaf
    • * salt and pepper
    • 1/2 teaspoon cayenne
    • 1/2 teaspoon cumin
    • 1 1/2 lbs large shrimp shelled

    1. Fry bacon and drain on towels
    2. Add olive oil and saute onions, 3 minutes till soft
    3. Add rice and stir
    4. Add all ingredients but shrimp & bacon
    5. Cover and simmer 30 minutes
    6. Add Shrimp and Bacon
    7. Cook about 8 minutes more
    8. Fluff with fork and serve.

This is a great recipe for a large group. Easy to prepare and pretty to serve. I would recommend making a separate pot for kids and using less cayenne pepper. You might try some lemon wedges on the side, too!
