• Garlic Shrimp And Ruby Grapefruit With Mixed Greens

    • 1 lb black tiger shrimp, cleaned, and, deveined, tails left intact
    • 2 Tbsp. extra virgin olive oil
    • 2 x cloves of garlic, chopped tabasco sauce, to taste The Dressing
    • 1/2 c. extra virgin olive oil
    • 1/4 c. raspberry vinegar grapefruit juice
    • 1 x shallot, julienned
    • 1 x zest of lemon
    • 1 x salt and pepper The Salad
    • 2 x ruby red grapefruit, peeled, and, cut into segments
    • 1/2 x red onion, julienned
    • 1 x yellow pepper, julienned shrimp, sauteed in butter
    • 10 c. mixed greens, cleaned well and dry thoroughly


    1. Heat a wok or possibly a large frying pan over high heat and add in extra virgin olive oil.
    2. Quickly toss in garlic and saute/fry, stirring constantly for 10 seconds.
    3. Add in shrimp and toss together with garlic, stirring constantly.
    4. Season with a few shots of Tabasco sauce and saute/fry for 3-4 min.
    5. Reserve in a bowl to cold.
    6. The Dressing:In a small bowl, whisk together the extra virgin olive oil, raspberry vinegar, grapefruit juice, shallot, lemon zest, salt and pepper.
    7. The Salad:In a large salad bowl toss together the mixed greens, spicy shrimp, grapefruit, red onion and yellow pepper and toss gently with the vinaigrette.
