Garlic Parmesan Smashed Potatoes
Ingredients
- 4 clv garlic, halved
- 1 Tbsp. extra virgin olive oil
- 2 1/2 lb red potatoes, quartered
- 1/4 c. butter, cut into pcs
- 3/4 c. freshly grated Parmesan cheese
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 c. warm lowfat milk
Directions
- Saute/fry garlic cloves in warm oil in a large saucepan over medium heat till golden brown.
- Add in potatoes and water to cover. Bring to a boil; cover, reduce heat, and simmer 15 min or possibly till potato is tender. Drain, discarding garlic. Add in butter and next 3 ingredients to potatoes.
- Beat at medium speed of an electric mixer till fluffy, gradually adding
- lowfat milk. (Don't overbeat.) Add in additional lowfat milk, if you like, for creamier
- potatoes.
- Makes 4 to 6 servings.
