  • Garden Green Bean & Spinish Squares

    My Husband loves this one. I add cheese on top when I re-heat in the microwave the next day.

    Ingredients

    • 35
    • 1 T oil
    • Salt to taste
    • 1/4C water
    • Chopped garlic to taste.
    • (I use pre chopped garlic in water from the jar)
    • 1 medium chopped sweet onion
    • 1 each chopped Red and Yellow Bell Peppers, (also garden faire)
    • 1 large bag (about 30-40) whole, fresh from your garden, green beans
    • 16oz bag of chopped spinach. Remove all liquid!
    • (I used fresh from my garden, chopped and par boiled it.)
    • 1/4C each, finely chopped chives, mint and parsley (all from my front garden.)
    • 1C milk
    • 3 whole eggs
    • 1 Pkg. Shredded Mozzarella cheese

    Directions

    1. I shoot some 'Pam' on my large skillet then add the first 7 ingredients.
    2. Put on a tight lid and cook quickly until green beans are soft yet still nice and green. (remove from heat)
    3. Remove the green beans to a food processor and pulse till finely chopped or grated.
    4. Return to skillet and add the already chopped spinach, chives, mint and parsley. Mix well.
    5. In separate container whip together milk and 3 eggs.
    6. Add to skillet and fully incorporate with other ingredients. Smooth down the top. ( Note: here you could put all in a glass baking dish and bake it in the oven) 350 degrees for about 30 mins. I wanted to try the fry pan method.
    7. Replace lid and cook on medium until center is cooked. About 5-10 minutes. Check with a tooth pick half way through and if it comes out clean it is done. Keep checking with a clean tooth pick till cooked. (Don't burn the bottom) Remove from heat. Cut into squares (You could nibble on the little rounded pieces). After all you've been working hard.
    8. Serve immediately and put some mozzarella on top to melt.
