    A fun summer recipe that counts as a salad!

    Ingredients

    • 6 turkey hot dogs
    • 6 whole wheat hot dog buns
    • 2 large tomatoes diced in 1/4 inch dice
    • 1 large cucumber diced in 1/4 inch dice
    • 1 medium zucchini diced in 1/4 inch dice
    • 1 large carrot shredded
    • 1 large celery stalk diced in 1/4 inch dice
    • 1 green pepper diced in 1/4 inch dice
    • 1 jalapeno pepper diced (optional)
    • 3 Tablespoons red wine vinegar
    • 1 1/2 teaspoons celery seed

    Directions

    1. Remove the seeds from the cucumber and dice. Quarter the tomatoes and squeeze out the seeds then dice. Prepare all other vegetables. You can use any vegetables that can be eaten raw.
    2. Mix vegetables with vinegar and celery seed. Allow mixture to sit at room temperature for 1 hour. Drain juice. The mixture can now be refrigerated or used immediately.
    3. Cook hot dogs according to package. Toast buns. Assemble hot dogs and pile on the salad. Serve immediately.
