    Easy, yummy rich pie. Use a store-bought pie shell or see links below. Top with ice cream or Redi-Whip.

    Ingredients

    • 1 cup light corn syrup
    • 3/4 cup sugar
    • 1/8 tsp salt
    • 5 tbs. cold butter cut in small chunks
    • 4 oz. unsweetened chocolate, or other favorite, coarsely chopped
    • 3large eggs, plus 1 egg yolk
    • 2 tsp. vanilla
    • 1/2 cup nuts optional

    Directions

    1. Heat oven to 350 degrees.
    2. Prepare crust by poking a few holes in it with the tine of a fork, place in freezer.
    3. In a 2 qt. pot, combine sugar, salt, and syrup. Stir. When it boils, remove from the heat and stir in butter and chocolate.
    4. Beat eggs and yolk with vanilla, and add to sugar mix. Combine well. Fold in nuts.
    5. Bake 35-45 minutes.
    6. Center will puff up a bit. Test with a toothpick for doneness.
    7. Cool for a half hour
