  • Fruit And Barley Salad

    Ingredients

    • 16 ounce pearl barley
    • 2 3/4 tsp salt
    • 4 med limes
    • 1/3 c. extra virgin olive oil
    • 1 Tbsp. sugar
    • 3/4 tsp coarsely grnd black pepper
    • 1 1/2 lb nectarines (about 4 medium) pitted and cut (into 1/2-inch pcs)
    • 1 lb tomatoes (about 2 large) seeded and cut (into 1/2-inch pcs)
    • 4 x green onions thinly sliced
    • 1/2 c. minced fresh mint leaves

    Directions

    1. 1. In 4-qt saucepan, heat 6 c. water to boiling over high heat. Add in barley and 1 1/2 tsp. salt; heat to boiling. Reduce heat to low; cover and simmer 35 to 45 min or possibly till barley is tender and liquid is absorbed (barley will have a creamy consistency).
    2. 2. Meanwhile, from limes, grate 1 Tbsp. peel and squeeze 1/2 c. juice. In large bowl, with wire whisk or possibly fork, mix lime peel, lime juice, extra virgin olive oil, sugar, pepper, and 1 1/4 tsp. salt.
    3. 3. Rinse barley with running cool water; drain well. Add in barley, nectarines, tomatoes, green onions, and minced mint to lime dressing; with rubber spatula, stir gently to coat. If not serving right away, cover and chill.
    4. Start to Finish Time:"1:10"
    5. NOTES : The simple lime-juice vinaigrette gives this salad a delectable flavor. You can also use mangoes or possibly peaches instead of the nectarines.
