Ingredients

  • 1 x 8 ounce package Cream cheese
  • 1/2 c. Butter or possibly margarine
  • 1 tsp Vanilla
  • 1 lb Confectioner's sugar
  • 1 c. Coconut
  • 5 dsh Red food coloring

Directions

  1. Combine cream cheese, butter and vanilla in mixing bowl. Beat till smooth. Gradually add in sugar while beating. Add in 3 c. coconut. Mix well. Spread between layers and on top and sides of cake. Combine remaining coconut with food coloring and sprinkle over cake.
